using up our summer bounty

Our CSA box has been full to overflowing with zucchini and squash, so it’s been time to do something with it.  Last week the kids and I put a dent in the produce by making Moosewood’s Apple-Zucchini Muffins.  As many of you may know, my kids can put an admirable world of hurt on some muffins, so it’s exciting to find a relatively healthful treat for them to munch on. Little w. is becoming quite a help in the kitchen, too.  While he sister is busy scamming any edible scraps that she can find (munching on chunks of apple, licking her finger and sticking it in the brown sugar when she doesn’t think I’m looking), w. eagerly does whatever I ask of him.  “Dice” up apple with a butter knife?  No problem.  Mix the batter by hand?  Sure!  Scoop out flour? You betcha!


Despite the help/interference, these muffins turned out spectacular and will make it into our regular rotation for sure.  The kids have eaten a revolting number of these muffins already which is fine as the recipe incorporates ingredients that we typically have on hand. Next up:  ripping off the morning glory muffins from Whole Foods for little w.
